Basso Sets Tone at Air France Soirée

The special evening hosted by Paolo Basso at Vinexpo was not only a learning experience but one of discovery at the same time. He explained that while the wines are for consumption in-flight, they are selected on the ground, taking into account elements of acidity and tannins, the perceptions of which change at altitude, adding, “It is my experience that the most important element we miss at altitude is the saliva. Due of the dryness of the cabin, we have less saliva in our palate and saliva is a natural lubricant. This is why we perceive less taste sensations, because we have a dry palate”.
